I think the answer is Make and assemble its own anchors. In the video HERE, the sub-titles say "Jaeger-LeCoultre was one of the first and remains one of the last to make and assemble its own pallets." The Pallet is the part of the movement that clicks in and out of the escape wheel and makes the ticking sound. This pallet is anchor shaped. But I haven't found anything that specifically says they make their own anchors. However Wiki does say that this type of escapement is sometimes called an anchor escapement.
The link HERE on on Jaeger-LeCoultre's site also says it's "pallets" and shows a picture of one.0 -
