    I know pork is quite cheap, but always find it chewy, even when cooking in slow cooker with soup/sauce etc. What am I doing wrong? :confused:

    My pork joint was just a little on the chewy side when I did it in the Slow Cooker. The usual trick for a joint when this happens is to cook it either at a higher temperature or to cook it for longer. Or both. It's just a case of trial and error really - different cuts in different cookers need doing in different ways.

    I shall certainly be buying that pork joint of mine next time I see it on offer and will probably give it an extra two hours on low to see how it goes. Pure guesswork! :)

  • The reason pork can be chewy is that it's so dense...if you look how 'loose' the fibres are on beef or lamb and then compare it with pork you'll see that they're really thin and close together, the only real solution is to have it carved thinly so the fibres are short, across the grain.

    Hi All,

    Being a vege, meat is all a bit beyond me. DH only eats chicken breast and steak, both expensive even if buying "value" ones.

    Since having my SC I've been able to make yummy stews/casseroles which he likes and upon indexing the SC threads I've learnt that being in the SC for along time tenderises (not sure if that is the right term) the tougher meat cuts.

    I would like to be able to do more with meat without a prohibitive cost,although I am vegie my kids are too young to go without meat and currently only eat chicken or mince.

    Can any of you suggest cheap cuts of meat,I'm not opposed to offal etc as long as it resonably easy to cook. Also, is it cheaper at the butcher as I currently get mine as the supermarket.

    Hi, tried shin of beef this week for the first time. not got a slowcoooker yet, so was done really slowly and on low heat in gas oven and a stew, delicious! think I paid just under £5 for 2lbs at our local - great butcher, don't know how prices compare to supermarkets as we buy all our meat there, they even chopped it up for me into bite size pieces!

    Cheap meat is things like stewing steak, mince, frying steak and belly draft of pork.

    Brisket is normally a cheap cut of beef, excellent for a slow cooker as it can be very tough. Can be used as a slow cooked roast, stew or casserole!!!!

    Alternatively, find a butcher and ask him. Don't be afraid :D I use a fab one on our 3 day market and the other week they had an offer on a cut of meet I didn't recognise the name of, so I asked. They were more than happy to tell me as well as how to cook it. (It was shoulder steak, which is a good meat for SC'ing - I think they called it chuck on the day) Very nice it was too.

    PS Price wise, last time I went, I bought 5lb mince, just over 5lb each of pork steaks and shoulder steak. It was all local, good quality, lean meat. I paid just over £19. I couldn't have got that at Tesco, that's for certain.

    I agree with catowen birsket is lovely in the SC thats what we are having for tea tonight and it just melts in your mouth. Very moreish!!!!!!
  • beef shin is very tasty, pork belly is good too - roast very slowly in a low oven for melt in the mouth meat, good with chinese spices, oxtail is very good too - needs long slow cooking so perfect for a slow cooker. Chicken thighs are also much cheaper (and I think tastier) than chicken breasts..

    If you want even cheaper then pork trotters (gelatinous, not much meat) and lamb hearts are good if you don't mind offal. Can recommend the Meat book by HFW which has lots of good recipes for the cheap cuts.
