Uses for fresh ginger

I accidentally ordered 1kg of fresh ginger instead of 1 piece :cool:

I usually only use it for garnishing cocktails :o. Does anyone have any suggestions on how I can use it all up (without becoming ver, ver, ver drunk)?

    That's a LOT of ginger.... many curries start off with ginger. Then there's cake and biscuits and lashings of ginger beer.

    It'll freeze too ... but once it's in suspended animation you might struggle to get round to feeling like doing something with it.

    I grate it and use it in Lemonades and drinks etc.


    Hot water in the morning, slice of lemon and grated ginger. Gets the system going.


    Lemon and raspberry sorbet (or any other fruit really)


    It is lovely grated and used when making a crumble.


    Lemon and ginger sponge cake.


    If I have left overs, I grate it up and freeze it.

    I freeze mine and grate from frozen.

    Also a slice in hot water is a nice alternative to fruit teas

    I add a few slices of ginger to my soups for warmth.
    Also finely grated into a salad dresssing of oil and vinegar.delish!
