Hi all
I'm moving house in a few weeks time and trying to use up stocks from cupboards.
I have found 5kg of pudding rice (I think that I may have issues!) and need suggestions for recipes- other than pudding!
Any suggestions lovely peeps?

I would look up some recipes for congee or another kind of soup with rice http://en.wikipedia.org/wiki/Congee
This is the recipe I use for congee, I adapt it to the vegetables I have in store: http://leitesculinaria.com/78738/recipes-congee.html

- I would substitute the chestnuts for something else
http://www.foodandwine.com/recipes/minestrone-with-arborio-rice - with risotto rice, but could work with shortgrain rice
These cakes look interesting too:
Rice cake with figs - I havent tried it, but would use plums if i did not have figs: http://www.tarteletteblog.com/2011/08/recipe-gluten-free-fig-gateau-de-riz.html

Check whether your pudding rice is already sweetened. I think some of them are, and if it is it might not be all that nice in some savoury recipes!0

You can make risotto with pudding rice if you're too cheap to splash out on arborio rice (which I am).0

If the rice isn't sweetened, it can be used in place of sushi/sticky rice."We always find something, hey Didi, to give us the impression we exist?" Samuel Beckett, Waiting for Godot.

Love the look of the rice cake- will definitely try that one!
Also love the idea of using it as sticky rices or in congee- I had congee for the first time in China in March so wil recreate once I've moved
Risotto is a staple for me so I will also use it in that!

Rice is a grain, so you could use it in a similar way to porridge.
I usually make simple rice pud with a few sultanas or raisins and less sugar, the leftovers make a great warm breakfast with a little splash more milk.0 -
How can you forget that you have bought around 11 pounds of pudding rice.
:rotfl:make the most of it, we are only here for the weekend.
and we will never, ever return.0 -
I know it's still a rice pudding but have you tried the slimming world way of making it with low cal pop instead of milk, I just had a tango pudding earlier and it was lush.Shady pines ma, shady pines0

It's really simple , for each person use the amount of rice recommended on the packet and add a can of low cal fizzy pop. I have used lilt, tango and 7up. Just boil it up till the rice is cooked. I have seen recipes where a low cal hot chocolate drink is used but never tried it. I also use the pop instead of sauces in stir frys but I find it needs a little corn flour to thicken. Diet coke is quite similar to hoisin.Shady pines ma, shady pines0
