Hello everyone :hello:
I am trying to do a meal planner & have done a 14 day winter one which was easy, things like stews, shepherds pie, chilli, toad in the hole, roasts etc but I am having difficulty thinking up meals for my summer meal planner.
So far I have only thought of quiche & scotch eggs & now I am stuck for ideas!
Can you think of any more ideas, the cheaper the better!

Pasta salads are great, ring the changes with tuna, salmon, prawns, smoked bacon etc.
Rice salads are also good. Double up on rice/pasta salads and take some for lunch the next day.
Smear a whole chicken with honey and wholegrain mustard. Bake and pull apart and serve with crusty bread, coleslaw and green salad.Life's a beach! Take your shoes off and feel the sand between your toes.0 -

Vegetable chilli - seems much lighter than a meaty one.
Jacket pots and salad.

I'm writing all these ideas down & will go & try to find some recipes as I haven't made some of these meals before.

quiche / new or baked pot / salad
cous cous salad with marinated chicken breast
salmon / tuna fillet with herby new pots / veg or salad
filled jackets - scoop out middle mix with whatever you like and pile back into shell,bake in oven ,with some grated cheese if liked0 -

One of my favorites is stuffed peppers. We usually do them with some fried chopped onions, mushrooms and ricotta cheese, and a bit of cheddar grated on top. Roast the peppers first for about 20 minutes.
Another great summer one is a cous cos salad with roast meditteranean veg (courgettes, tomatoes, peppers, maybe some red onions). There is a great delia recipe for this. Delias summer collection also has a yummy recipe for chicken pieces done in breadcrumbs with parmesan mixed in the breadcrumbs and some garlic.
I also like to make a big salad with smoked mackeral, new potatoes and dark green leaves.
Focaccia bread is great in the summer as well.0 -
Chicken kebabs - thread some chopped chicken, mushrooms, peppers, onions and tomatoes onto skewers and grill. You could even flavour the chicken with something out of your store cupboard beforehand. And with leftovers, I make a chicken salad for next day's lunch.Its nice to be important but more important to be nice!0

Skewers with chicken, peppers, mushrooms and onion, with veg flavoured rice and salad.... mmmmmm im drooling already!
I do loads of rice and salad in the summer with skewered stuff - it so easy to make!
