Pastry results are in.. researcher.. they are absolutely gorgeous!! .. thank you. I got 2 dozen deep mince pies and decided that really was plenty for this week so I made little jam tarts and lemon curd tarts with the rest so I have 2 dozen of those as well!!!

My daughter has just helped herself to at least 7!!

Definitely the best pastry I have ever made!!

Inkie, they should freeze for a good few months.. but why freeze them? just EAT them!! lol

High praise for Researchers recipe and thank you lovey.. it is delish!

Where are you? I'm coming for tea - I love lemon curd tart too :rotfl:

(Don't you think this pastry would be perfect for egg custard tarts too?)
  • Right that's it. Saturday afternoon I'm making mince pies! :D

I have curtains to make for the playroom.. 8ft drop for the french doors!! Oh the glee!!

I shall just have to get crumbs and jammy bits on my new curtains.

Number 1 sprog was rather impressed with his 'mince pie pasty' made with the remaning bits of pastry.. he even photographed it! .. then scoffed it.

Suppose I should do dinner.. *sigh*

  • My great aunts, god rest em, used to !!!!! the lids of their home made mince pies whilst still warm and use a teaspoon to pour over a little drambuie. I guess it would work with most liquers :)

I made my Christmas pudding last week and when I took it out of the pan there was a lot of clear white fat on top of the steaming water. It smelt gorgeous - all spicy and fruity and Christmassy so I saved it and used it with an equal quantity of butter to make pastry for mince pies. it didn't make a large batch but it tasted wonderful
It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!

  • Hi, I just had to bring this up again. I made these on Friday (I got 31 pies :D ) and it was the best pastry I have ever, ever made! Even my hubby who "doesn't like mince pies" has been scoffing them!!!! Thank you so much to Researcher and her neighbour. :)
