Hopefully the weather will be nice soon so we can enjoy some days out with a picnic lunch. Does anone have any nice ideas for picnic foods, in particular veggie ideas.

Not too sure on Veggie options but this is what we do for a picnic normally..things like:
HM scotch eggs
HM sausage rolls
Pasta or rice salads
Boiled eggs
Wraps or pitta breads instead of a loaf
HM Coleslaw and potato salad
Cold chicken
Hams/Cheeses/Tuna/Salmon etc

hub and the kids love these ,they are easy to make and are yummy hot or cold so ideal for a picnic
Pizza Whirls
Make up two packets of pizza base mix or half a small packet of bread mix to make a firm dough which is not sticky (or make a bread dough using around 250g of flour).
Knead and leave to rise for around 30-60 minutes.....

Thanks for the pizza dough recipe. I have a packet mix in the cupboard. I'm always stuck for lunch ideas at home, my DS would enjoy making those.Nevermind the dog, beware of the kids!0

What about spanish omlette/tortilla
Selection of cheeses you like with crusty bagette/crackers
Quorn swedish meatballs (either on own or with wrap/pitta and salad & salsa)
I also love: veggie pasta salad, rice salad, potato salad, couscous etc.
Veggie sausages on sticks
Cheese and pinapple on sticks
fresh fruit

I love to make a veggie rice salad (personally, I eat it for lunches, but it would make a great picnic food...).
I use the Asda Mushroom savoury rice (at 37p per pack - I realise it can probably be made cheaper using OS traditions, but I think it is pretty good value as it is!). Then I add as many vegetables as I can think of...to bulk it out. My personal favourites are roasted mushrooms, griddled courgettes, blanched asparagus, peas, sweetcorn, raw chopped red/yellow/green peppers, and spring onion. I admit, I originally started doing this because it was Weight Watchers friendly and very filling as a lunch because of all the "free" veg, but everybody I introduce it to loves it, so I guess it doesn't come across as a "deprived, dieting lunch"(!), and it is veggie friendly, and I think it would go very well as picnic food.

P.S. I'm sure that other savoury rice mixes would work just as well as a base (I am not on commission for Asda!!) - equally, I am sure that talented cooks could flavour their own "plain" rice and get results which are just as tasty!!0 -
Quick picnic it just to take some pitta's, tortilla's, salsa and hummous and get dipping !Currently on a life sort-out !! ...reducing bills, decluttering and getting into fitness - busy bee0
