low fat recipes required please

I have just come from my doctor and he says i need to loose some weight,
I have put on two stone since i gave up smoking twelve months ago.As i drive
coaches for 12hrs aday i dont get to the gym much, :j So does anyone have any TASTY easy and quick to make low fat meal recipes they might like to share,Ilike most foods,please help as i wieght 14 stone and need to get to
12 stone.Will keep you all posted on how i do....THANKS :wave:

    Ever thought of joining a diet club? I can recommend Slimming World, it's nothing like the 'usual' diet clubs, no humiliation, a great laugh and some good slimming tips. There's alot on here about slimming world - I lost 2 stone in 4 months and found it the easiest eating plan to stick to.

    Cough up some phlegm and I could probably tell you the calorific value. (We're a tad @nal about calories at Chez MATH) LOL

    Changing the way you cook will reduce the amount of calories/fat you are eating without having to eat completely different meals. Here are some tips that I have employed for years.

    Always brown off mince in the micro and then drain off all free running fat.

    Reduced the qty of mince for recipes and replace with rolled oats or grated carrot and parsnip.

    Replace cream in sauces with half fat creme fraiche.

    Always grill sausages and other meat stuff on a rack to allow the excess fat to drain away.

    Mash potatoes with a little milk only you really don't need to add butter.

    When roasting tatties par boil and drain then add a couple of tablespoons of oil to the pan and jiggle them around to coat and roast on a tray. Much better than them sitting in two inches of fat. Even better us a spray oil.

    Even if you don't like skim milk to drink use it in recipes or dilute regular milk with water.

    Add an extra steamed/boiled veg to every meal and reduce qty of pie or whatever. If you usually do two veg make it three and so on.

    For meals where there are no greens, say lasagne and chips or egg and chips reduce the chips and do a qood portion of side salad. I never serve a meal without veggies or salad (It's cheaper too)

    Never deep fry chips. Stick with low fat oven ones or make your own using potatoes, parsnips, carrotts and spray oil of a baking tray.

    Where a recipe tells you to saute things before combining in a recipe try softening them in the micro instead with no added fat. (Not always as tasty but with some recipes it makes no difference)

    If you like your HM puddings (we do and have them every night) Don't eat both courses back to back. Delay th second course until later in the evening and it will replace you snacking if you get the munchies about 9 o clock (like wot I do)

    Drink lots of water, research has shown that people who drink water lose weight and stay at an ideal weight better than people who don't.

  • Great tips MATH,esp. the one about delaying pudding til the evening.I get serious munchies in the evening.

    Windy,I need to lose about 4 stone so you probably don't want to take any notice of my advice :rotfl:but I did successfully lose it all about 17 years ago.It was easier when young,free and single.

    What helped me were some books by Sue Kreitzman who specialises in low-fat cookery without sacrificing taste.Try Amazon,a lot of her books are out of print but available second-hand.I often see them in Oxfam too.

    The technique I found most useful was sauteeing in stock. Onions,garlic and things like sun-dried tomatoes(the dry-pack ones,not the ones in oil) are put in a dry non-stick pan until starting to smell toasty,then you add a little stock(powder or hm) and some other flavouring liquid if you've got it like wine or sherry.This all bubbles up and makes a sticky,concentrated,flavoursome base for curries,veg stews,meat sauces etc without the need for adding any fat.
    She uses tomato products;puree,pasatta,tinned,salsa a lot for low-fat flavour.Also sauces like soy,teriyaki,Worcester,chili and lots of spices.

    I couldn't get on with using skimmed milk dairy products as substitutes for mayo and creamy sauces so I just didn't bother with them.

    Finally,think fish,seafood,poultry,rabbit,venison and pulses for lean sources of protein.

    I feel a real fraud for giving advice on weight loss when I actually put on weight last week,but the advice works if you take it(I don't at the mo :o )

  • :D:D thanks everybody, very good advise, Squeaky thanks for the mega thread, from there i also came across a link to the recipezaar, great site, ive even managed to cook , well its cooking now, a red lentil spaghetti bol, i added a few extra veg, i will let you know how it turns out, starting today my weight is 14st i like to get to 12st,thanks windybottom.
