hello!
I am looking for a fish to cook and I want it to have these characteristics:
1) filleted, without any fishbones
2) thick pieces (thick fish), like 2 inches thick
3) with white and deep brown meat (you know some fish that have deep brown meat under their skin and deeper their meat changes to white)
can you tell me please which fish and where can I buy it?
it would be best, if it is available in supermarkets, either fresh or frozen

go and have a look at the fish counter in a supermarket - or even better , speak to a local fish monger ( if there is one ) ?0 -

Hake is a very nice fish, cheaper than cod and less endangered, not sure if you can buy fresh Pollock, nice too but apparently not as easy to get unless you have a good fishmonger. Anything else would be very expensive.
