Children and OS food

Fallen off the wagon as far as the children are concerned.

1 DS aged 6 has a packed lunch so like to do a hot tea, other 4 has hot lunch some days and sandwichches others at childminders.

They are hungery when they come in after school, I work through lunch so we eat at 4.30pm. Other half has his warmed up when he comes in from work at 7.30pm.

What i need are simple quick tea`s that we can all eat, children do not like anything in a sauce like stew, not over keen on meat. The eldest does not like cheese or tomatos. He does eat lots of fruit and veg.

Any idea`s?

Used to give them sausages,smiles and veg 1 day and say fish in breadcrumbs,roast pot and veg another-ie what we were having, but since I went back to work have been doing more of kiddy meals for them and curry for us.

    what about HM burgers, even veggie ones with mash, veg and gravy. or chips and salad????

    what about

    HM fish cakes or corned beef cakes
    hot filled wraps - any filling they like
    quesedillas - again whatever they like inside
    HM pizza and HM wedges
    veg chilli / bolognese / lasagne
    HM quiche / baked pot / salad or veg
    tuna or corned beef hash
    a rice / cous cous / pasta dish - with ham or chicken and veggies etc in but no sauce if they not keen
    Sausage or HM veggie burger or tuna burger etc / mash / veg or baked beans

    Sizzling Sausage

    350g long grain rice
    275g chipolata sausages
    1 red pepper
    1 green pepper
    175g onions
    1 tbsp olive oil
    175g frozen sweeetcorn
    175g frozen peas

    preheat oven to gas 4

    place th rice into sieve and rinse under cole running water. bring a pan of wter to the boil add the rice and return to the boil. stir once then reduce the heat, cover and simmer for about 11 mins or till tender. drain in a sieve ricse with boileing water cover and keep warm.

    Meanwhile cut the sauasages into 3 and put in an oven proof dish. cook in a preheated oven for 10-12 mins or until golden brown.

    seed and finely dice the peppers. peel and finely chop the onion. heat the oil in a large frying pan and gently cook the pepper and onion till soft and lightly golden.

    meanwhile bring a pan of water to the boil add the weetcorn and the peas bring back to the boil and cook for 2 mins drain and add to the peppers and onions.
    remove the sausages from the oven and drain of the excess liquid and add the sausages to the pan.
    stir in the cooked rice over a low heat until hot and sizzling.

    HM chicken "nuggets" or goujons ???
    HM "burgers" or meatballs , using lamb / beef / chicken / turkey mince or tuna

    Tuna Burgers

    Bowl 1:
    1 and 1/2 cans of tuna drained, 1 tbsp of Red Thai curry paste, 75g breadcrumbs, handful of fresh coriander, 1 1/2 eggs beaten. Mix together and make into small burgers. Cook in oil until brown on both sides and heated through.

    Bowl 2:
    1/2 can tuna drained, 25g breadcrumbs, splodge of tomato ketchup, 1/2 egg beaten. Mix together and make into small burgers. Cook in oil until brown on both sides and heated through.

    you say they dont like anything saucy lol but will they eat soup?

    really easy yummy one :

    CREAMY TOMATO SOUP

    serves 4

    1 onion
    2 tbsp olive oil
    tin chopped toms
    1/2 tsp caster sugar
    200ml veg stock
    1 bay leaf
    2 tbsp mascarpone cheese
    handful fresh basil leaves
    salt & pepper
    2 tbsp fresh cream

    1) peel & chop onion into small pieces.
    Cook in the olive oil until soft
    2)Add chopped toms,sugar and stock.Drop in the bay leaf and cook gently for 15 mins
    3)Take pan off heat and add the mascarpone and basil.
    4) Blend until smooth,season if necessary.
    5) serve with a little cream swirled on top

    Cheesy Corn Triangles

    This recipe is great, a light cake type bread which you can add other ingredients too ... I’ve added peas and mushrooms in the past. It is an ideal snack and also great served with soup

    100g plain flour
    100g semolina
    1tsp baking powder
    100ml milk
    2 eggs beaten
    50g butter
    100g sweetcorn
    100g grated cheese

    Set oven to 180 C/350 F / Gas Mark 4

    Lightly grease an 18cm circular tin

    Mix flour, semolina and baking powder together in a bowl.

    Beat eggs and milk together in another bowl

    Gently melt the butter in a saucepan

    Add sweetcorn and cheese to the flour mixture and then pour the eggy mixture into the bowl and add the butter

    Mix ingredients until well combined

    Spoon mixture into the baking tin

    Smooth the top and bake for 20 minutes until golden brown and springy to the touch

    Just asked dd aged 8 what she likes about OS and she says theres less salt and sugar in the food, and they like to help make things too. All my kids have recipe books:)
    Tonight they have hm pizza which they love as they can choose toppings, and i love it because its so cheap.
    Other easy meals are haggis and mash, hm chunky chips and egg or sausages and mushy peas or beans, cheesy mash, omelettes, soup, pasta with tuna sweetcorn and pesto, noodles with vegetables and omelette, meat or prawns.
    Jelly is cheap but it requires a good enough memory to make it in the morning so its ready for tea - sorry kids! LOL
    You can do a steamed pud in the microwave in 4 minutes;)

    PIZZA PIES

    1 pack ready made short-crust pastry or make your own if you have the time or inclination :p
    2 eggs
    1/4 pt milk
    2oz cheddar cheese grated (or any other cheese)
    A pinch of herbs, a bit of pepper.
    your choice of fillings : tinned sweetcorn, chopped peppers, chopped cooked meat (ham, salami, chicken etc.) chopped mushrooms, frozen peas ...whatever your children will eat.

    Grease a muffin tray.
    Cut out 4" circles. IKEA plastic bowls did the job! You could use a saucer.
    Then line the muffin tray with the pastry circles. Re-roll any scraps to make more circles if needed.
    Beat the eggs and milk together in a jug. Add the herbs and pepper (if liked).
    put a bit of grated cheese in the bottom on each pastry case.
    Then add the fillings to each pie.
    Pour on the egg/milk mixture until it nearly reaches the top of the pastry.
    Bake at 180 'C for 20-25 mins until lightly browned.

    These can be served hot or cold (good in lunch boxes) and can be frozen.

    MEATLOAF

    "It sounds very old fashioned but children and grown ups still love it. You can choose between using lean chicken, turkey, or beef mince whatever suits you on the day"

    Use 500g of mince and add one large egg, a couple of tablespoons of tomato puree, one finely chopped onion, perhaps some garlic or herbs and mix together (your children might like to help with this bit). Put it in a meatloaf style dish and pop it in the oven for between 45mins to 1hour on about 175 degrees or until cooked through.

    Slice it up, varying the slice sizes depending on the appetites and serve with potatoes and veg.

    TIPS

    To reduce the fat content of the mince, brown it off in a frying pan first and drain off the fat. Another trick to reduce the fat content still further is to put the browned mince in a sieve and pour boiling water over it.

    Include bread crumbs or cooked rice to make it more filling and tasty.

    While you've got the frying pan out it's worth softening the onions by frying them gently for 5 mins - this makes them more tasty and easier to digest.

    For variety you can add peppers or mushrooms to the mixture before baking - if your children aren't keen on the veg, disguise them by chopping them up in a blender first.

    Slice any leftovers up and freeze in meal size portions for next week (remember to heat through thoroughly when reheating).

    BURGERS

    Mix a peeled grated apple with 500g of lean mince beef and a teaspoon of marmite. Shape and firmly press into around 10 burgers - squeeze the mixture together so they don't fall apart during cooking. Grill or fry until cooked through ... takes about 10 mins each side


    Simple beef Pasta bake

    Serves 4 - 6
    3 tblspns sunflower oil 500g
    1 lb coarse-cut minced beef
    1 large onion
    326g / 11.5oz can of sweetcorn, drained
    0.5 x 300g/10.6oz can of tomato soup
    75g / 3oz macaroni, cooked
    oil for greasing
    75g / 3oz cheese, grated
    Salt & pepper

    Preheat oven to gas mark 5 / 190C /375F. Heat the oil and fry the meat in a large pan, stirring, till the meat browns. Push to one side, add the onion and cook, gradually stirring it into the meat. Allow to cook for 3 - 4 minutes. Add the sweetcorn and soup to the meat. Stir in the macaroni and season. Turn into a shallow greased oven-proof dish and sprinkle with cheese. Cook for 40 minutes or until brown on top.

    It's easy to make a large amount of this and it tastes great and very cheap and nutritious. You could also use chicken or turkey mince with chicken or mushroom soup.
