  • Potato cakes

    1 packet smash
    1 egg yolk
    seasoning
    Fry light or at least a non-stick tray.
    Cling film

    Make up smash with as little water as you can get away with. Season, mix in egg yolk, cool in fridge.
    Preheat oven to 220 degrees C.
    flatten dough onto cling film, fold clingfilm back over itself, so that you are rolling the dough between 2 pieces of cling film. Makes it much easier to handle! I had to do this in batches, so a little fiddly. Roll it out to a square or rectangle shape, about 1/2 cm thick.
    Spray oven tray with fry light, cut dough into squares, and using a fish slice transfer them onto the tray. Cook for approx 6-10 minutes on first side until set and starting to brown, turn over and repeat.

    NB Don't worry if they stick a bit the first side - once the top is browned and you flip them they don't stick, and the less than perfect surface just becomes crispy and even nicer ;)

    To make them into pizza bases, just add tomato puree, cheese and other toppings, after you've done the above.

  • Recipe:
    3 small potatoes
    Tin of chickpeas
    3 small onions
    Madras curry powder
    Turmeric
    Asafoetida (This is in the recipe but I don't know what it is! :o)
    Salt and pepper
    1 egg

    Preheat the oven at 220 degrees C. Chop the potatoes into smallish cubes and boil. Fry the onions until soft, before adding the potatoes and the chickpeas, drained, to the frying pan. Add large pinches of the spices to the pan and mix in before frying on a low heat for a few more minutes. Mash the contents of the pan until all the potatoes and chickpeas have formed a thick paste. Shape, bake.

  • Tub of quark
    Seasoning
    1 egg
    Healthy extra portion of any cheese
    Macaroni pasta

    Put pasta on to boil, and beat egg with quark and seasoning. Put that mix on a low heat, and stir continuously. The mixture suddenly changes thickness - when that happens its done! Drain pasta, mix in sauce and serve cheese on top.

    Tin of baked beans
    Tin of red kidney beans, drained
    Tin of chopped tomatoes
    Chilli powder to taste


    Pour it all into a pain, and heat through. If you have more time, garlic, onions and red peppers are good vegetables to fry first before adding the tinned things. Serve with rice.

  • Breakfast Muffins (Serves 2)

    4 syn-free sausages, chopped

    2oz chopped red pepper
    2oz chopped onion
    5 eggs, beaten,
    4oz chopped mushrooms
    2oz grated cheddar cheese (HEA)

    Coat a 6 cup muffin pan with Frylight and preheat the oven to Gas 4

    1. In a medium non-stick frying pan, cook the sausage, pepper and onion over a medium heat for 5 mins or until the sausage is browned.
    2. Put the mixture in a bowl and cool slightly then stir in the eggs and mushrooms.
    3. Spoon the mixture evenly into the muffin pan and sprinkle each muffin with cheese.
    4. Bake for 20 mins or until eggs have set.

    Serve with bacon, tomatoes and ‘fried’ diced potatoes.

    Syn-free on Extra Easy plan + HEA
    Syn free on Original (+ HEA) if using potato as HEB
    Syn Free on Green (+ HEA) if using bacon as HEB

  • Party Foods and niibbles
    • Use quark as a base for Free or nearly Free dips, e.g. Mix 8oz quark with a clove of crushed garlic and 4 tbsp chopped herbs. Chill until required then use as a dip with vegetable crudit!s or fill celery stalks and hollowed out tomatoes.
    • Grate a Healthy Extra portion of cheese into a pot of very low fat cottage cheese, add 2 crushed cloves of garlic and serve with batons of cucumber, carrots and celery.
    • Blue cheese dip is heavenly, but can be incredibly high in Syns at around 3½ Syns per level tbsp! To make a low-Syn version of this tasty dip, crumble a Healthy Extra portion of Danish Blue into a pot of quark or very low fat natural fromage frais. Chill overnight and the whole tub will take on the flavour of the strong cheese. The whole tub will count as 1 Healthy Extra on Green or 5 Syns on both choices! You could also try this technique with other strong cheese, peanut butter or chocolate spread -If you find any other delicious combinations - let us know!
    Buffet
    • Free Scotch eggs - Shape the sausage meat from Syn-free sausages around 1 hard boiled egg, making sure that the egg is covered. Crush a Scan bran with a rolling pin (place the Scan bran in a plastic bag first!). Roll the covered egg in the crumbs until evenly coated. Bake in a preheated oven at 180ºC for about 25 minutes. Use the Scan bran as part of a Healthy Extra b choice for a super Free finger food, or count ½ Syn per crispbread used. (You can find Scandinavian Bran biscuits in most health food shops)
    • Chilled mini-kebabs - cherry tomatoes, rolled up ham/turkey, cubes of cucumber, inches of celery, squares of pepper and basil leaves to make a delicious finger food that's Free on Original.
    • Potato salad - Made with boiled salad or new potatoes and very low fat fromage frais. Flavour with garlic or fresh herbs for a fresh and free salad on Green.
    • Pasta salad - Made with 100% Free Food. Try mixed beans, sweetcorn, celery, raw mushroom, pepper, cherry tomatoes, radish, spring onion, and flavour with your choice of passata, very low fat natural yogurt or fromage frais for a Free extravaganza on Green. If you feel like a change, why not swap pasta for cooked rice or couscous

    Sausage rolls
    2 Quorn sausages
    Laughing cow light triangle (part HEA)
    2 slices WW bread (HEB)

    Use a rolling pin to 'flatten' out the bread.
    Spread bread with laughing cow.
    Roll bread around the sausage and hold together with a cocktail stick.
    Brush with beaten egg
    Bake in oven till crispy.


    Cheesy pizza toasties
    2 slices WW bread (HEB)
    1 Tomato
    2 Spring Onions
    4 Mushrooms
    ¼ red and ¼ yellow pepper
    42g Mozzarella Cheese (HEA)

    Lightly toast the bread on both sides
    Meanwhile, roughly chop the tomato, spring onions, mushrooms and red and yellow peppers. Grate the Mozzarella Cheese.
    Top both slices of toast with the veg and scatter the cheese over. Place under a medium grill until the cheese bubbles and the veg are tender.
    For extra taste spread 1tbsp of tomato puree on the toast under the veg (add half a syn for this)


    Onion Rings
    1 lb mild onions
    3 egg whites
    57gms dry wholemeal bread crumbs (HEB)
    2 teaspoons dried thyme
    1 teaspoon salt
    1 teaspoon paprika
    ¼ teaspoon pepper

    Cut onions into ½-inch slices; separate into rings and place in a bowl. Cover with ice water; soak for 30 minutes. Drain.

    In a small mixing bowl, beat the egg whites until foamy. In another bowl, combine the bread crumbs, thyme, salt, paprika and pepper.
    Divide the crumb mixture among three large re-sealable plastic bags. Dip a third of the onions in the egg whites; add a few rings at a time to crumb mixture and shake to coat. Place on a baking sheet coated with non-stick cooking spray. Repeat with remaining onions and crumb mixture. Bake at 400 degrees for 20 minutes or until lightly browned and crisp.
    I let my mind wander and it never came back!
  • Steak and Kidney (no pudding!)
    Stewing steak, and kidney, all visible fat removed and cut into mouth-sized pieces
    One onion, chopped or sliced
    Couple of cloves of garlic, sliced
    Fresh or dried herbs
    Worcester sauce and/or mushroom ketchup and/or spoonful Marmite and/or stock cube (I used all!)
    Measure of red wine if wished (syn it)
    Can of chopped tomatoes
    Half a can of mushy peas (thickening agent)
    Frozen spinach if desired
    Sliced mushrooms if desired

    I give microwave instructions as that is how I cook. Amend to suit stovetop if that's your way.

    "Fry" the onions and garlic (and mushrooms if used) uncovered, using a little stock or worcestershire sauce, until they are softened and beginning to brown. Scrape any caramelised bits back into the onions.

    Add the meat, tomatoes, frozen spinach, red wine, herbs, rest of stock/flavourings, and bring to the boil. Cover closely (I use a "microwave pressure cooker" as it has a tightly fitting lid) and cook on half power for 20 mins, stirring once or twice. Toward the end of cooking time check to see how much liquid is left and stir in some mushy peas to make a rich thick gravy. It will have to be cooked for another 5 or so minutes to absorb the mushy peas (and disguise them, for those who don't like mushy peas).

    I haven't given amounts, I used a ready pack of steak and kidney from the supermarket and it made about 4 servings.

    Serves 4
    Ready in about 1 hour 35 minutes
    Plus 12-24 hours marinating time

    1 tbsp fennel seeds
    4 tbsp madras curry powder
    4 garlic cloves, crushed
    1in/2.5cm piece fresh root ginger, grated
    2 tbsp white wine vinegar
    4fl oz/113ml passata
    5oz/142g fat-free natural yogurt
    2lb/908g skinless chicken thigh fillets, cut into large bite-sized pieces
    Fry Light
    1 large onion, finely chopped
    1 cinnamon stick
    4 green cardamom pods
    Salt and freshly ground black pepper
    400g can chopped tomatoes
    ¼pt/142ml chicken stock
    Fat-free natural fromage frais, chilli powder and a handful of fresh coriander, chopped, to serve

    Dry-fry the fennel seeds and curry powder in a non-stick frying pan for 1-2 minutes, or until the fennel seeds release a warm aroma. Transfer the seeds and powder onto a clean work surface and crush with a rolling pin (or use a pestle and mortar set if you have one) until ground into a powder.

    Put the ground spices into a food processor along with the garlic, ginger, vinegar, passata and half the yogurt. Blend until smooth. Transfer to a large glass or plastic bowl with the remaining yogurt and add the chicken. Mix well, cover and leave to marinate in the fridge for 12-24 hours.

    When ready to cook, spray a large non-stick wok or frying pan with Fry Light and place over a meduim heat. Add the onion, cinnamon and cardamom pods. Stir-fry for 6-8 minutes, until the onion is soft and translucent. Add the chicken mixture and cook, stirring frequentely for 10 minutes. Season well.

    Stir in the chopped tomatoes and stock and bring to the boil. Reduce the heat to low and simmer, uncovered, for 40-45 minutes, stirring occasionally.

    Serve the chicken in warmed bowls topped with fromage frais and a sprinkling of chilli powder. Garnish with the coriander.

    1 tbsp. dark treacle
    15g powdered sweetener
    2-3 beaten eggs
    1 tsp. cinnamon.
    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Stir in the porridge oats, treacle, cinnamon and sweetener. Mix in the beaten egg and stir well.
    Line a loaf tin with foil and spray with Frylight. Bake for 25-30 minutes in a medium oven (190c).
    OR
    Place in a microwavable container and microwave on high for 5 minutes.

    Scan Bran Christmas Pudding (24½ syns in total)
    2 Weetabix (6½ syns)
    8 scan bran (8 syns)
    2 tbsp. Mincemeat (4 syns)
    3 tbsp. Golden syrup (6 syns)
    1-2 eggs, beaten
    1 tsp. Brandy essence
    1 tsp. Ginger
    1 tsp. Cinnamon
    2-3 tsp. Mixed spice
    28g powdered sweetener
    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary).     1 level tbsp. Golden syrup (2 syns)
    15g powdered sweetener
    2 eggs, beaten
    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Stir in the cocoa powder, syrup and sweetener. Mix in the beaten egg and stir well.
    Line a loaf tin with foil and spray with Frylight. Bake for 25-30 minutes in a medium oven (190c).

    ½ tsp cinnamon (adjust according to taste)
    2 level tsp honey (2 syns)
    15g powdered sweetener
    2 eggs, beaten
    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Crumble in the Weetabix, stir in the marmalade, spices, honey and sweetener. Mix in the beaten egg and stir well.

    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Crumble in the Weetabix, stir in the ginger preserve, ginger, honey and sweetener. Mix in the beaten egg and stir well.

    1 Weetabix and 4 Scan Bran (HEB)
    5oz grated carrot
    1/2 tsp mixed spice
    1 tsp cinnamon
    1 tsp nutmeg
    2 tbsp mincemeat
    2 tsp runny honey
    3 eggs, beaten
    Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Crumble in the Weetabix, stir in the honey, mincemeat, carrots and spices. Mix in the beaten egg and stir well. Line a loaf tin with foil and spray with Frylight. Bake for 25-30 minutes in a medium oven (190c).
    OR
    Place in a microwavable container (or pack lunch box) and microwave on high for 5 minutes. To make a tasty topping mix Quark soft cheese, lemon juice and sweetener and spread onto the carrot cool once cool.

    Scan Bran Sticky Toffee Buns 1 Healthy ‘B’ Selection and 4½ syns
    5 scan bran (HEB)
    1 sachet toffee options
    1 tbspn. syrup
    1 egg
    Soften scan bran with hot water - leave to swell for better results. Mix all ingredients together with beaten egg. Bake in a moderate oven on non-stick bun/muffin trays. Makes either 12 buns in 15 minutes or 6 muffins in 20 minutes.

    Scan Bran Rhubarb Crumble 1 Healthy ‘B’ + 1 syn OR 2 Healthy ‘B’
    5 scan bran (HEB)
    454g rhubarb stewed with sweetener
    Soften 5 scan bran with hot water and leave to swell. Mix together with Brown 'Gold' sweetener. Sprinkle the scan bran mixture over 454g of rhubarb stewed to taste.

    Chocolate Hazelnut Truffles
    5 scan bran (5 syns or HEB)
    1 1/2 level tablespoons Nutella chocolate spread (6 syns)
    Crumble scan bran into a bowl, add Nutella and mix well. Divide into little bun cases and leave in fridge to set. Should make approx 20 truffles.


    Scan Bran surprise 1 HEB + 7 syns or 12 syns for the whole dish .
    5 scan bran (HEB or 5 syns)
    1 Tbsp Nutella hazlenut spread (4 syns)
    1 toffee Mullerlight
    8oz very low fat fromage frais
    1 vanilla Mullerlight
    1 meringue nest (3 syns)
    Crush scan bran and mix with Nutella, leave to set in the base of serving dish. Mix together toffee Mullerlight and fromage frais (this should be sweet enough but you could add additional sweetener if desired).
    Pour over crushed scanbran and Nutella mix. Crumble meringue nest into vanilla Mullerlight and layer over toffee Mullerlight mix.

    SCAN BRAN BACON AND CHEESE SAVOURY
    5 scan bran (HEB)
    3 beaten eggs
    Lean cooked and diced bacon (as much as you like)
    1 oz extra strong Cheddar cheese, finely grated
    Salt and freshly ground black pepper
    Soften Scan bran in a little hot water
    Add the eggs to the scan bran mixture
    Add remaining ingredients and mix well
    Place in a microwavable dish and cook approximately for 4 minutes
    This dish takes 4 minutes in an 800 watt microwave and will need a little longer in less powerful ones.
    8 ½ syns whole dish on Original or Syn free if using cheese a Healthy Extra ‘A’ and the Scan brans as a Healthy Extra ’B’

    CREAMY CHEESE AND GARLIC STUFFED MUSHROOMS (Serves 1)
    1½ syns on Green /Original choice when using Dairylea Light Triangles as a HEA

    2 large flat mushrooms
    ½ small onion
    1 clove of garlic
    Fry Light
    3 Scan brans (3 syns)
    3 Dairylea Light Triangles (½ HEA)
    2 tbsp quark skimmed milk soft cheese
    To serve:
    Salad leaves
    Sprigs of fresh parsley

    1. Heat the oven to 220°C/425°F/Gas 7. Remove the stalks from the mushrooms and finely chop them. Finely chop the onion, crush the garlic then add them all to a saucepan lightly sprayed with Fry Light and soften gently for a few minutes. Then remove the saucepan from the heat.
    2. Finely crush the Scan bran and add to the cooked vegetables in the saucepan, along with the cheese triangles and quark and mix thoroughly.
    3. Spray the mushrooms with Fry Light and divide the mixture between the mushrooms.
    4. Place in the oven and cook for 10 minutes, or until the mushrooms are cooked through.
    To serve: Arrange the salad leaves on a plate, place the mushrooms in the centre and garnish with sprigs of parsley.

    Tips
    When eating them on their own try toppings that are more moist and leave them to soak in for a few minutes before eating as this softens them slightly. Mix chopped tomatoes, basil and chopped ham in a bowl with lots of salt and pepper - leave for a while for the tomatoes to reduce some juice (which they will do due to the salt) and then pile on your scan bran. You can also add diced red onion or HE of olive oil - like bruchetta - yummy!
    Cottage cheese with pineapple is a good topping.
    If you have a few scan bran with a glass of water it really fills you up.
    Breakfast: 2 scan bran (2 syns) broken into pieces and covered with frozen fruits of the forest/ summer fruits. Defrost it in the microwave (or leave to defrost overnight) and the juices from the fruits make the Scan/Oat bran soggy. Top it off with a banana and yogurt.

    Cheese & Onion Scan Bran Burgers (Syns: 3 syns +1 HEA for all 3 burgers)
    3 Scan Bran (3 syns)
    Hot Water
    2 Eggs
    1 Bunch Spring Onions
    42g Reduced Fat Cheddar (HEA)
    Soy Sauce
    Seasoning
    Fry Light
    1. Crumble the Scan Bran, add hot water and allow to cool.
    2. Beat the eggs and add a good sprinkling of soy sauce plus the seasoning.
    3. Mix the egg mixture with the Scan Bran.
    4. Finely chop the onions and add to the Scan Bran.
    5. Grate the cheese and add to the Scan Bran.
    6. Allow to stand for 15 minutes.
    7. Shape into thin burgers (makes 3 quite large burgers) and fry in Fry Light until golden on both sides.
    They are best served with Baked Beans or Mushy Peas

    Chocolate fudge cake (Syns: 12 Syns for the whole cake and it’s freezable)
    5 Scan brans broken into small pieces (HEB)
    1oz sieved icing sugar
    2 level tbsp golden syrup
    4 tbsp Canderel
    2 beaten eggs
    1 tub quark
    1. Soak the Scan bran in a little hot water until soft.
    2. Add the rest of the ingredients and mix well.
    3. Place in a parchment lined loaf tin and bake 190C for 30 – 35 minutes.
    Scan Bran Scotch Eggs(Syns: Free if using Scan Bran as a Healthy Extra)
    Syn “Free” Sausages or sausage meat or Bowyers sausages (½ syn Mediterranean)
    Eggs (Boiled)
    1 Egg (Beaten)
    1 Scan Bran (crushed using a rolling pin!) (1 syn)
    1. Boil the eggs, allow to cool and then remove shells.
    2. Remove skins from sausages if using. Mould sausage meat into rounds and flatten.
    3. Coat each egg in sausage meat until completely covered, dip into beaten egg mix, and then roll into Scan Bran crumbs until coated.
    4. Place on a baking tray and cook at 180° for about 25 minutes.
    5. Serve hot or cold with salad.
    Variations:Add 1 finely chopped onion to the sausage meat.
    Add lean minced bacon to the sausage meat.
    Add 1 level tbsp of tomato ketchup (1 syn) to the sausage meat.
    Add curry powder, herbs or spices to the sausage meat.

    Onion bhajis (Syns: 2½ syns for all the bhajis on Green or Extra Easy)
    1 large potato
    1 large onion
    2 cloves Garlic
    5 Scan Bran (HEB)
    3 tblspn curry powder
    1/3 cup hot water
    1 egg
    1 tspn turmeric
    Seasoning
    1. Crumble the Scan Bran until it resembles breadcrumbs.
    2. Add the water and egg and soak for 10 minutes.
    3. Peel and grate the potatoes.
    4. Peel and chop the onions and garlic.
    5. Mix with the Scan Bran.
    6. Add the curry powder, turmeric & seasoning.
    7. Shape into bhajis.
    8. Fry in fry lite until cooked.

    Pizza (4 Syns + HEA for the whole pizza)
    1. Soak 4 Scan Bran in a little hot chicken stock (4 syns)
    2. When the stock has soaked in and the Scan Brans are soft, mash.
    3. Form the Scan mash into a pizza shape on a baking tray covered in baking parchment .
    4. Cook in a medium oven until crisp.
    5. Place ½ tin of Napolina chopped tomatoes in thick sauce in a microwave dish along with half an onion finely sliced, a crushed garlic clove and half a tsp of syn free sweetener.
    6. Cook on medium heat until the sauce is thickened.
    7. Finely grate 28g cheddar cheese (HEA) and mix into at least 3 tbsp Quark.
    8. Add ¼ tsp Colman’s mustard powder and a couple of shakes of Knorr Aromat or Schwartz season all.
    9. Mix well and leave to stand to allow the quark to absorb all of the flavours.
    10. Pile the tomato sauce mixture onto the crisp base and blob cheese mixture over.
    11. Heat in a hot oven until the cheese has browned.

    Oatbran/Scan Bran cake
    5 Scan/Oat Bran (HEB)
    1 Mullerlight yogurt
    2 eggs
    1/4 tsp baking powder
    5 tbsp sweetener or to taste
    1 tsp cinnamon
    1. Cover the Scan Bran with boiling water to soften.
    2. Mix all the ingredients together and microwave for approx 7 mins - gorgeous!

    Top ten toppings for Scan Bran!
    1. Top each biscuit with 1 laughing cow cheese and 1 level teaspoon of lemon curd (½ Syn each spoonful)
    2. Mix a tub of quark with stilton from allowance and leave in fridge overnight - the whole tub is then 6 Syns or 1 Healthy Extra
    3. Soften 2 Scan Bran (2 syns) with a spot of boiling water, add milk from your allowance, microwave for 50 seconds and add granulated sweetener - perfect start to the day!!!
    Top with...
    4. Cheddar cheese and bacon
    5. Bacon and banana (don't knock it until you've tried it!)
    6. Bacon and melted stilton
    7. Tuna mixed with very low fat mayo and spring onion
    8. Cottage cheese
    9. Quorn sausage and tomato
    10. Laughing Cow cheese, ham and tomato

    Soften some onions in micro (or pan)

    Meanwhile make some smash (or could you mashed pots but would have to squeeze them dry!) but quite dry! and mix in lots of curry powder (to taste)

    Mix smash & onions together (when cool, you don't want burnt fingers!) and put dollops on baking tray (the messier the better, nice crispy bits! but not to big or will fall apart when taking out of oven!) and spray with fry light

    Bake in over until ready


    Sorry for the lack of measurements etc. i normally chuck it all together & see how it goes!:rotfl:
