View Full Version : Flapjacks - Help!!

I've been baking successfully for over 25 years, but flapjacks have me beat. They NEVER turn out right. The flavour is fine but the texture isn't quite right. Made some yesterday and they were too sticky. Just made some more and they were kind of hard and brittle round the edges. What am I doing wrong? :confused: The recipe I use is :

75g Butter (over the years have tried both butter & spread)
2 Tablespoons syrup (tried heaped and level-ish)
75g Brown sugar (tried caster and granulated)
150g Oats (tried using slightly more and slightly less)

I would be grateful for any suggestions, please.

The oven temperature and length of cooking are what makes a flapjack soft and chewy or crispy. Somewhere I have a chart of cooking temps and times for 'the perfect flapjack' but I'm afraid I'm still in the middle of a kitchen re fit, and don't know where it is off hand :( Basically, the higher the temp and the longer the cooking time, the crisper the flapjack will be (which may be why your second batch were crisper - the oven may have taken a while to get to full temp).

I have the same problem. I made 2 batches today - on was fine and the other just didn't stick together well. I have tried different recopes but none seem to turn out quite right.

My recipe says to bake at 180C (fan assisted so I reduce it my about 10C) for 20 minutes.
