Is it legal for my car to be removed and impounded without any warning at all because I - stupidly - forgot to renew the tax disc?

Yes, you either have to renew the disc of declare the vehicle as sorn and not have it on the road.

Sorry your car has been impounded but you have had warning, they include a leaflet with your tax reminder that warns what can happen if not taxed.

But you did have warning - the expiry date on the tax disc!

The one thing that really annoys me is that they crush perfectly good cars. If they have the legal right to do this to someone's car, why doesn't the DVLA have some way of re-selling these cars and using the profits for something useful?

They do re-sell some, but they have to hold them for a while and storage costs so they cherry pick, plus now and again crush a really nice or valuable car as an example.
